- Fats: Built from fatty acids and glycerol (Digested back into these before absorption.); The body's concentrated energy store (Roughly 38 kJ per gram, more than twice carbohydrate.); Insulates the body and cushions the organs (Subcutaneous fat conserves heat; fat pads protect the kidneys.); Carries the fat-soluble vitamins A, D, E and K (Cut fat out entirely and these vitamins are lost too.); Ghee, oil, butter and nuts are rich sources (Both animal and plant sources.)
- Proteins: Built from amino acids (About twenty different ones, joined in chains.); Used for growth and repair of tissue (The only nutrient that can build new tissue.); Enzymes, antibodies and haemoglobin are made of it (Almost every working molecule of the body is one.); Some of its building blocks cannot be made by the body and must be eaten (The essential amino acids — which is why diet quality matters, not just quantity.); Pulses, eggs, fish and milk are rich sources (Pulses are the main source in most Indian vegetarian diets.)
